Q'uq'umatz - Hatch Pineapple

Q’uq’umatz, The Feathered Serpent, is the K’iche’ Mayan god of rain and wind, who created mankind with the god Tepeu. An analogue for the classic Mayan Kukulkan or Aztec Quetzalcoatl, this god is a riff on more popular deities we know well. Similarly, this sauce is a riff on our classic green chile cumin sauce but with hatch chiles and pineapple instead of tomatillo.
